What was your inspiration for becoming a Chef?

Chef  Umberto’s love for food began at an early age in his childhood kitchen. He fondly recalls how his mother would always prepare meals for him and his father. On the days she wasn’t available, young Umberto took it upon himself to warm up the meals for his father and himself. What started as a simple act of heating up meals soon blossomed into a passion for cooking and creation. 

How long have you been cooking?

Chef Umberto has been perfecting his craft since 1984, beginning his culinary journey in Italy from 1985 through 1988, where he studied culinary arts in Milan and honed his skills.

What is your favorite dish at The FIFTH?

Chef Umberto’s top pick at The FIFTH? The expertly Crafted Burger, bursting with bold flavors and exceptional attention to detail.

If Chef Umberto had to choose a favorite, it would be Top Chef, a show that inspires him to constantly push his culinary boundaries.

He enjoys the challenge of a constantly evolving menu, where he can innovate new recipes while sharing his expertise with fellow cooks. For him, it's about blending creativity with collaboration to ensure every dish meets the highest standards of quality.

What is your favorite cuisine to make?

Chef Umberto’s top cuisine picks are Italian and French, with Spanish cuisine coming in a close second. 

If you could eat one dish for the rest of your life, what would it be?

Chef Umberto’s all-time favorite dish is a Neapolitan pizza, known for its thin crust and fresh mozzarella cheese.
