Meet Our New Executive Chef, Ernesto Hernandez
This spring, we’re proud to introduce the newest edition to The FIFTH family, Executive Chef Ernesto Hernandez! With over 30 years of experience and a passion for bold, fresh flavors, Chef Ernesto is already making his mark in our kitchen. Get to know the man behind the menu below!
Where have you worked in the past?
Chef Ernesto has been in the culinary world for over 30 years! He spent much of his career with the well-known Patina Restaurant Group, working at locations across Southern California, including Tortilla Jo’s, from 2004 to 2024. During this time with Patina, Chef Ernesto had the privilege of learning from his mentor, Chef Manfred Bachtrog, for many years.
What do you enjoy most about working at The FIFTH?
Chef Ernesto says it best, “It was a good move!” He loves the supportive and professional team here at The FIFTH. With a great group around him and the flexibility to focus on his craft, he’s able to do his best work without distractions. We’re happy to have him!
What would you recommend to our guests?
If you haven’t tried the ribeye yet, Chef Ernesto says now’s the time. He also has a soft spot for a future dish coming to our menu soon! Trust us, you'll want to try both.
What's your favorite dish to make?
Chef Ernesto loves making seafood pastas. It’s where his heart is in the kitchen. Here at The FIFTH, the ribeye is a personal favorite to prepare. And when it comes to all-time comfort food? Mexican food, always. It's home.
Which DisneyⓇ character are you most like?
With careful consideration, Chef most identifies with Buzz Lightyear from Toy Story! And honestly, we can see it. To infinity and beyond, Chef! 🚀
A little more about Chef Ernesto
When he’s not in the kitchen, Chef Ernesto is a proud husband of 34 years, a father of three sons, and a grandfather of four! He’s also a big Los Angeles sports fan: baseball, soccer, basketball, and football are his go-tos. He brings that same team spirit into the kitchen every single day, mentoring his crew and leading by example alongside his colleague, Luis, who is currently training under him at The FIFTH.
